These egg muffins are incredibly easy to put together, and they make a delicious meal for anytime of the day. In fact, I made two trays of these today – one for lunch and another to go with our dinner. My son LOVED them, and could barely stop himself shoving them into his mouth. The best part is that you can play around with different ingredients to create an egg muffin that is perfect for your family. With not much meat and cheese on hand here, I used only vegetables today, but I’ll be sure to find some more supplies when I go to the bigger grocery store this weekend. I love how these egg muffins can be completely customized accordingly to what you have available. We always have eggs and vegetables, so this is probably going to become a regular go-to dish!
Another great way to make these is to use leftovers for the filling – a bit of chicken, vegetables and rice left over from the night before would go great cooked up in this manner and served as an egg muffin. If you have a busy morning lined up, and you like to plan ahead, you could bake up a tray of these and leave them in the fridge overnight. Or do as I did this morning, fill two trays with the mixture, but only bake the second tray just before they are needed. Super easy!
12 eggs (One egg per muffin)
Salt and Pepper
Chopped cooked breakfast meat (Bacon, sausage, ham, etc.)
Diced vegetables (Peppers, onions, broccoli, mushrooms, and so on)
Freshly finely chopped greens (Spinach, kale, etc)
Optional: Shredded cheese

Preheat the oven to 180°C (350°F) and grease a muffin tray.
Crack the eggs into a medium bowl and whisk.
Next, divide the meat, vegetables and greens between the muffin cups.
Pour egg mixture over the veggies and meat, filling cups about 3/4 of the way.
Bake for approximately 20 minutes.
Allow the egg muffins to cool slightly before using a knife to slice around the outside of the muffins.
Remove carefully and enjoy with ketchup, ketchup, mustard, or hot sauce (or just AS THEY ARE!)
