I sure do love using muffin pans for absolutely everything! A regular muffin pan is the perfect size for a serving of most things, but we tend to eat two or even three of these meatloaf muffins. They are irresistible! A couple of months ago I shared my Easy Egg Muffins with you, and many of you said that you absolutely loved them. Today I will be sharing how we enjoy meatloaf round here, and the great thing about this method is that the meatloaf in muffin pans takes half the time compared to baking a full loaf.
These meatloaf muffins are a huge hit with my boys! In fact, they are a big hit with this mama too because I use oatmeal instead of the conventional bread crumbs, so they are gluten free and packed with protein. This simple meatloaf recipe makes more than the three of us can eat at one meal so we generally save the reminder for lunch the next day, or even pop them in a ziplock bag and freeze them for another day. Then we have meatloaf anytime. Just thaw and reheat. So easy!
We usually enjoy our meatloaf muffins with a salad and potatoes or pasta.
