One For Me, One For the Mix
I’m not big on baking, but recently my baked goods seem to be quite a hit! Perhaps I should spend more time making desserts, cookies and breads, but there are just so many other things that I would rather be doing. Life in China does however result in having to bake your own healthy treats… because whether you want to avoid sugar, flour, dairy, or all of the above, this is NOT an easy place to do that! Even baking healthy supplies means sourcing out the necessary ingredients – either online, from foreign import stores, or from abroad.
Eli is eating more and more these days, and since we have ALMOST completely cut all flour and sugar from our house, it is quite difficult to think of snacks for him. Sure there is fruit, but sometimes he needs a little something else. I was therefore thrilled when I found a simply recipe that makes gluten-free, sugar-free banana muffins. Sometimes we add semi-sweet chocolate chips (which definitely have sugar in them) but I still feel good knowing there is “no sugar” in these.
The Sweetest Little Helper
Our little man is such a great helper lately. He excitedly gets his kitchen stool, places it next to me, and climbs up to help me. He mashes the bananas, mixes the contents, counts out the measurements, and (his favorite part) puts the toppings into the muffin cups for me.
There are seriously soooo many of these simple healthy muffin recipes online now. I have tried a number of versions, and usually it just comes down to what I have in the pantry. If I have oatmeal and bananas, I can usually make the rest up. I ran out of honey once and completely omitted adding any sweetness – the muffins were still good. Of course, being on keto means avoiding grains, so I don’t eat these, but hubby and little man LOVE THEM! A batch of 12 barely lasts 2-3 days.

He loves to eat them almost immediately after they come out of the oven… often the will grab one while as soon I have put them onto the cooling rack. This kid is getting taller by the day, and often I barely see that little hand reach up onto the counter, and grab a muffin. Such a cutie. I love this stage that he is in – so eager to help and take part in the kitchen activities.
