Potato, Broccoli & White Bean Soup
I have been as hungry as a horse for the past few days, so I have been making soups to eat when I get home from school. I also needed an excuse to use our new blender for something other that smoothies. I started calling it a “smoothie-machine” because we use it only for fruit, ice and yogurt!
This soup is simple, filling, and really delicious!
1 head of broccoli
2 large potatoes
3 garlic cloves
One can of cannelloni beans, drained
3 cups of vegetable stock
salt and pepper
Wash and cut up the potato and broccoli.
Place the potatoes and garlic into the vegetable stock and let them boil.
When they are tender but not completely cooked, add the broccoli.
A couple of minutes later add the beans.
When everything has cooked up nicely, take the pot off the heat.
Puree in batches in a blender until smooth.
Season with salt and pepper.
ADD some cheese if you can’t love without it!
Serve and enjoy!
